Chickpea Patties BLW

I am always thrilled when I find a recipe that’s easy and that my little one asks for more of. These chickpea patties were a hit (with both the 1 and the 2 year old!). I would prep the patties in the morning, and then throw them in the pan just before lunchtime.

Chickpea Patties

Ingredients:

  • 1 can chickpeas, drained and rinsed

  • ½ cup flour

  • ¼ cup breadcrumbs

  • 2 cloves garlic, minced

  • ½ cup green onions, finely chopped

  • ¼ tsp rosemary leaves, minced

  • 1 egg, slightly beaten

  • Juice of ½ lemon

  • Zest of 1 lemon

Instructions:

  1. Add all the ingredients except for the breadcrumbs and flour and pulse until they are evenly combined.

  2. Then, add the flour and the breadcrumbs and pulse once again.

  3. Form small patties with your hands and place them on a tray.

  4. Chill in the fridge for half an hour.

  5. Heat 1-2 tablespoons of oil in a pan over medium heat and fry the patties on both sides until they turn golden.

  6. Place them on top of a paper towel to remove any excess oil and serve.
